About us

We spent 2 years perfecting our recipe every single day before we opened this shop. We also use a New York Water Maker that allows us to have the same mineral concentration, pH, etc. as the water in New York City. It took us 2 years to make this recipe as authentic as possible, and we are excited to let the Gainesville community come give it a try!

Check out some of our bagels

Our bagels are made from scratch everyday we are open (yes, starting with just flour). They are rolled during retail hours. Then, the dough sits overnight in refrigeration for at least 12 hours (hence why we can't just make more if we sell out… bagels are a process). The bagels are then boiled and baked fresh every single morning starting at 2AM. We also use a New York Water Maker that allows us to have the same mineral concentration, pH, etc. as the water in New York City. We also never throw bagels away. At the end of the day, we either wholesale bagels to other restaurants or we donate to first responders (Shands, GPD, Gainesville Fire) and local shelters.
